Vermút, vermú, vermu, vermouth, vermut—whatever you call it, it is a fantastic aperitif that you
can enjoy before lunch, just to open the stomach.
Slightly bitter and also slightly citrusy, with 2 ice cubes, and a slice of lemon (always for white
vermouth) and a slice of orange (for barrel vermút). In Spain, it is fashionable, and “vermut time” is
very popular and also a bit of a hipster lifestyle. Vermouth is wine macerated with herbs, citrus
fruits, and especially with the root of wormwood. Hippocrates is often named as its precursor, as he
macerated wine with wormwood flowers and dittany leaves. That distant relative was called herbal
wine or Hippocratic wine. Its industrialization is much more recent and began in the 19th century.

Taberna La Montillana

So, number 1 for the amount of variety is Taberna La Montilla. This tavern is a temple of the wines
from Montilla-Moriles, and they have 12 vermuts from Montilla-Moriles on the menu. From all the
tastes of Andalusian recipes in organic style, to more bitter and intense from Barquero winery, to
smoother from Casablanca. If it is difficult to choose… go for La Aurora vermouth… you will love
it!
Casa Tollín

It is a place that serves vermouth in a really old-school way. It is a tiny place, but you can also drink
outside on the street, holding your glass on the wall of the bar.
Taberna Góngora

In a titanic glass with ice, we recommend this tavern just before lunch. With many curiosities about
old tools for creating or handling wines, and some decoration about bullfighting (welcome to
Córdoba). Order at the bar, stand up, it is more fun, and you can see the view of the other people.
Taberna Barón

In a square that resembles the arches of the Mezquita de Córdoba, it is a little bar that is open the
whole day where you can always drink a glass of vermouth with some olives, in a really informal
ambiance, where maybe, you will listen to some local flamenco singer, just drinking something in a
rehearsal, while you are listening to them.
Taberna Los Mosquitos

From the barrel, this old tavern, very close to our tasting room, has an authentic soul. With regular
customers who have been sitting there for decades, very friendly, they do not speak any English, but
no worries… you will be satisfied when you go. You need to ask for 1 vermouth and they know…
